In New Brunswick the celebration of the maple sugar season is a springtime tradition. From mid-March to late April, sugar maple trees are tapped to collect the sweet sap. The sap is then boiled to a syrup concentrated to at least 66% sugar. Up to 40 liters of maple sap are needed to make 1 litre of pure maple syrup.
Our Certified Organic Maple Syrup is carefully processed and bottled at our family-owned sugary near the Northeastern limit of the Appalachian Hardwood Forest - where heavy winter snowfalls, cool nights, warm spring days and healthy maple trees produce the maple sap used. According to a recent study by scientists from the University of Rhode Island, maple syrup contains 54 beneficial compounds. Several of these compounds have antioxidant and anti-inflammatory properties, which may be beneficial in fighting cancer and diabetes. Maple syrup also contains several beneficial minerals and is a wonderful natural sweetener.
